Zoodle Egg Nests!

A breakfast or brunch recipe that is healthy, easy to prepare and ready in minutes. Healthy zucchini noodles (or zoodles) are naturally gluten-free and offer a low carb and low-calorie alternative to bread or pasta. Zoodle Egg Nests are perfect on busy mornings or as part of your Sunday meal prep plan.

Zoodles are long strips of zucchini that resemble pasta. They are fresh, healthy and delicious and a fun way to get picky eaters to eat more veggies. Joe and I are zoodle fans – we order them precut from Fresh Direct to save on cooking time. Zoodles are great with a simple marinara sauce, topped with sautéed veggies or as egg nests. Fun fact: I had no idea what Egg-In-A-Nest was before I met Joe. He introduced me to this clever way of eating eggs and toast. Now that we avoid bread as much as we can Zoodle Egg Nests are the next best thing. Plus it’s so simple to make!

Ingredients

2 medium zucchini, spiralized

3 eggs

1 large garlic clove, minced

1 tbsp olive oil

Cooking spray 

Fresh cilantro, chopped

Red pepper flakes

Salt

Instructions

1. Pre-heat the oven to 425 degrees F.

2. Place a skillet over medium heat and add the olive oil. Add the garlic and sauté 30-45 seconds.

3. Add the zoodles and toss to combine. Let cook, 2-3min or until they begin to soften a bit. Remove from heat and set aside.

4. Spray a baking sheet with cooking spray

5. Transfer the cooked zoodles to the baking sheet and make 3 nests creating 2-3 inch wells in the center of each one for the egg.

6. Crack 3 eggs and add one to each noodle nest.

7. Place the nests in the oven to bake, 8-10min.

8. Once ready, remove the nests from the oven and garnish with chopped cilantro, salt and a sprinkle of red pepper flakes.

Serve hot and enjoy!

Easy Gluten Free Oatmeal Pancakes

Easy Gluten Free Oatmeal Pancakes. A dairy-free and refined sugar free recipe made with simple ingredients. Perfect for picky eaters and busy mornings. 

Stuck on breakfast ideas? Yup, us too. Carolina asked for mac-n-cheese every morning this week (insert eye-roll) I try to get creative/think of new recipes but let’s be honest, who really has time for creativity at 7am? I definitely don’t.

I remembered the recipe for these pancakes and made a double batch to have for the week. The recipe calls for simple ingredients; gluten-free oat flour, eggs, cinnamon and nutmeg. There is no refined sugar or processed flour, just simple and good-for-you ingredients that are filling, satisfying and help keep us energized throughout the morning.

I switch it up by adding a drizzle of honey or maple syrup. Sometimes I spread Apple Butter (this is our new favorite, btw) and top with fresh fruit. Anything goes!

1. It is loaded with soluble and dietary fiber which are great for the digestive system

2. Consuming oats can help prevent sugar spikes in the blood

3. Oats are a great source of complex carbs and can help improve energy levels

Instructions

1. Add all the ingredients in the blender and blend until smooth.

2. Place a griddle or frying pan over medium-high heat and melt the ghee. Pour or scoop the batter onto the griddle and cook until pancakes are golden brown on each side.

3. Serve and top with honey, maple syrup or fresh fruit (optional).

Healthy Gluten-Free Apple Pie Bread Made With FlipBox Cake Mix.

Made with fresh Gala apples, FlipBox cake mix and other simple ingredients, it’s a perfectly delicious fall recipe that the entire family can enjoy!

If you follow me on Instagram you’ve seen how I use the dry cake mix that comes in FlipBox to bake other healthy desserts. The mix is similar to vanilla boxed cake. It’s versatile, easy to work with and combines well with most dessert recipes. The best part is it’s made with simple and clean ingredients that not only taste good but are good for you too. #WinWin!

I prepare FlipBox cake mix according to package instructions, combine other ingredients to make healthy dessert alternatives. As easy as 1,2,3 🙂

Here’s how I used the cake mix to make Apple Pie Bread. Check out those crispy edges, soft middle and dairy-free ice “cream” on top! Trust me when I tell you it didn’t last very long in our house!

Gluten-Free Apple Pie Bread

Ingredients

1 package FlipBox Cake Mix, prepared according to package instructions
2 tsp apple spice
2 Gala apples, peeled cored and cubed

Toppings
Dairy-Free Vanilla ice “cream” (optional)

Instructions

1. Preheat your oven to 325 degrees F. Grease a 9×9 baking pan with coconut oil cooking spray
2. In a medium-sized bowl, combine FlipBox Cake Mix ingredients according to package instructions
3. Add apple spice and combine, then gently fold in the apples
4. Transfer the batter into the greased baking pan and place in preheated oven
5. Bake 30-35 min or until edges are golden brown and a toothpick inserted down the middle comes out mostly clean
6. Let cool before serving
7. Plate and top with your favorite dairy-free ice “cream”!

The holidays are finally here and they’re filled with lots of fun activities, family get-together and, of course, food. I love sharing healthy dessert options like these muffins with dairy-free caramel sauce. They’re a delicious alternative to unhealthy holiday treats that help keep up with your healthy eating habits. Plus they’re:

Gluten-Free Chocolate Muffins

Ingredients

1/3 cup warm water

½ cup unsweetened cocoa powder

1/3 cup ghee, melted

1 egg

1 teaspoons vanilla extract

1 cups coconut palm sugar

½ cup brown rice flour

½ cup tapioca flour

½  teaspoon xanthan gum

1 teaspoons baking powder

¼  teaspoon ground coffee

Pinch of sea salt

 

Dairy-Free Salted Caramel Sauce

Ingredients

1 can (13.5 oz) full-fat coconut milk

½ cup coconut palm sugar

½ teaspoon tapioca starch

½ teaspoon sea salt

1 teaspoon coconut oil

1 teaspoon vanilla extract

 

Muffin Instructions

  1. Preheat oven to 350 degrees F. Line a standard muffin tin with 12 mini paper liners and spray with cooking spray.
  2. Add the warm water and cocoa powder to a small bowl and whisk to combine. Set aside.
  3. In a large bowl, combine sugar, brown rice flour, tapioca flour, xanthan gum, baking powder, coffee, and salt.
  4. Add the melted ghee, egg and vanilla extract to the cocoa mix and whisk thoroughly to combine.
  5. Add the cocoa mixture to the flour mixture and combine.
  6. Using a spoon, evenly distribute brownie batter among muffin tins and bake, 25-30min or until edges begin to crisp and a toothpick inserted comes out mostly clean.
  7. Allow cooling completely then coat with a generous amount of caramel sauce.
  8. Serve and enjoy!

Caramel Sauce Instructions:

  1. Place a saucepan over medium heat.
  2. Combine the coconut milk, coconut palm sugar, tapioca flour, and salt and bring to a boil.
  3. Reduce the heat to a simmer and let cook, stirring occasionally until the sauce turns a dark amber color, 30-40min.
  4. Remove from heat. Add the coconut oil and vanilla extract and combine.
  5. Transfer to a glass jar and let cool.
  6. Drizzle over your favorite dessert.

The sauce will stay fresh in the refrigerator for up to a week.

Give this Easy Healthy Garlic Sesame Noodle recipe a try any night of the week because who doesn’t love easy and healthy recipes that can be ready in less than 20min? I DO, I DO!!! This dish is also low in calories, gluten-free, dairy-free and is packed with tons of flavor. So yummy!

I totally get the benefits of meal prepping, it offers quick, healthy options and helps us stay on track BUT come Thursday (sometimes even Wednesday), I’m over it and wish I had something new, fresh and exciting for dinner. Welp! This noodle recipe does the trick! It’s perfect on nights when you want something new and don’t have much of time. Prepare the sauce while the noodles cook and BOOM…a delicious dinner that is ready in no time!

Feel free to add more veggies and extra protein! Bon Appetit

Ingredients

1 package of noodles (or pasta of choice)

1/3 cup Liquid Aminos

3-4 garlic cloves, minced

1 tbsp ground ginger

2 tbsp rice wine vinegar

1 tbsp toasted sesame oil

1 tbsp avocado oil

1/2 tbsp red pepper flakes

1/2  tbsp toasted sesame seeds (more for garnish)

1/3 cup green onions, chopped (more for garnish)

 

 

Instructions

  1. Cook pasta per package instructions
  2. While the pasta cooks, mix the sesame sauce ingredients
  3. Drain and rinse the pasta then add in the sauce. Coat noodles evenly
  4. Serve and garnish with green onions and sesame seeds
  5. Enjoy!

Caro can’t decide what she’s wearing this year – it’s a toss-up between Winter Else (cape and all) and a fairy with wings. I’m loving every minute of her excitement this year. I hear her singing “Trick or Treat Smell My Feet!”!
